Thanksgiving Yams
Bring on the turkey, dinner rolls, and candied yams! Thanksgiving week is here, and I know my family is getting so excited about all of the delicious foods that we are going to have. One of the big staples at our Thanksgiving table is obviously the yams. We are a yam loving family, and serving up some yummy yam goodness is just what the whole gang looks forward to. Two of the family’s favorite yam treats are candied yam souffle and chocolate chip candied yam biscuits. I figured you might want to try one or both of these this holiday season, so here are the really simple recipes.
Candied Yam Souffle
Ingredients:
- 8 Tbs. butter (one stick)
- 1 cup light brown sugar
- 1/2 cup chopped pecans (or walnuts)
- 4 large yams
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 bag mini marshmallows
Directions:
- Preheat the oven to 400°F.
- Scrub the yams thoroughly and pat dry. Place them on a baking sheet and bake until very soft (about one hour). Allow the yams to cool until you are able to handle them. Peel the yams and throw out the peel. Place the yams in a large bowl and mash with a potato masher.
- In a saucepan over medium heat, melt the butter. Add in the brown sugar and nuts and simmer for around 3 minutes.
- Pour the mixture over the yams and stir it in, then add in the cinnamon and nutmeg and stir.
- Put the mixture into a casserole dish and cover with a layer of mini marshmallows.
- Bake for 25 to 35 minutes.
Chocolate Chip Candied Yam Biscuits
- 1 cup all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- pinch of cinnamon
- 1 Tbs. packed light brown sugar
- 3 Tbs unsalted butter
- 1 can candied yams (15 oz)
- mini chocolate chips
- Preheat oven to 425°
- In a mixing bowl mix the flour, baking powder, salt, cinnamon and brown sugar until there are no lumps.
- Mix the cold butter into the flour until it is coarse in texture.
- Add the yams and knead until it comes together. Knead in the chocolate chips.
- Roll the dough out and cut biscuits.
- Bake for 15-19 minutes or until they are golden. Transfer biscuits to a cooling rack and wait about 15 minutes before serving.


The couple above are growing a unique species of yam know as the Kiekie yam. It shows that you can never count a yam as just a yam. You'll find yourself facing a possibility you weren't expecting.
